Major project:

As food takes centre stage in modernist fine dining, the experience of a meal becomes a theatrical event that expresses the chef’s vision, plates become central to the experience. They are used to highlight the visual properties of the food, relate to flavour and engage the diner in different ways just as the food they create engages and stimulates.

The living plates beak the conventions of an ordinary white plate, just as modernist cuisine breaks the convention of traditional haute cuisine. Coming to life as an interactive canvas exploring the direct relationship between food, plate and diner. They enhance the experience of a meal by adding a new dimension to plating and presenting food making it no longer static but moving and responding.
